  • 3 tablespoons honey

  • 1 tablespoon soy sauce

  • 2 cloves garlic, minced

  • 1 tablespoon sesame oil

  • 2 tablespoons sesame seeds, toasted

  • Fresh parsley, chopped for garnish

  • Large baking sheet

  • Mixing bowl

  • Small saucepan

  • Whisk


Step-by-Step Instructions:

  1. Preheat Oven: Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper.

  2. Prepare Carrots: In a mixing bowl, toss the carrots with olive oil, salt, and pepper until well coated. Spread them out on the prepared baking sheet.

  3. Roast Carrots: Roast in the preheated oven for 15-20 minutes, or until the carrots are tender and starting to caramelize on the edges.

  4. Make Glaze: While the carrots are roasting, combine honey, soy sauce, garlic, and sesame oil in a small saucepan over medium heat. Cook, stirring occasionally, until the garlic is fragrant and the mixture has thickened slightly, about 3-4 minutes.

  5. Glaze Carrots: Remove the carrots from the oven and transfer to a serving dish. Pour the honey sesame glaze over the carrots, tossing gently to coat.

  6. Serve: Sprinkle with toasted sesame seeds and chopped parsley before serving.
