Ingredients List:

  • 1/2 cup sago pearls

  • 400ml can coconut milk

  • 2 cups water

  • 1/2 cup granulated sugar (adjust to taste)

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • Toasted coconut flakes, for garnish

  • Mint leaves, for garnish (optional)


Step-by-Step Instructions:

  1. Soak the Sago: Rinse the sago pearls under cold water, then soak in water for at least 30 minutes to soften.

  2. Cook the Sago: Drain the sago and transfer to a pot. Add 2 cups of fresh water and bring to a boil. Reduce heat and simmer, stirring frequently, until the sago pearls become translucent and soft, about 10-15 minutes.

  3. Add Coconut Milk: Once the sago is cooked, add the coconut milk, sugar, vanilla extract, and a pinch of salt to the pot. Stir well and bring the mixture back to a gentle boil, then remove from heat.

  4. Chill the Pudding: Divide the pudding mixture into serving bowls or glasses. Let it cool to room temperature, then cover and refrigerate for at least 2 hours, or until set.

  5. Garnish and Serve: Before serving, top each pudding with a layer of thick coconut cream, a sprinkle of toasted coconut flakes, and a mint leaf for a touch of color.
