Preparation Time and Servings:

  • Prep Time: 10 minutes

  • Cook Time: 25-30 minutes

  • Total Time: 35-40 minutes

  • Servings: 4 people

Ingredients List:

  • 1 large head of cauliflower, cut into florets

  • 3 tablespoons olive oil

  • 1 teaspoon ground turmeric

  • 1/2 teaspoon garlic powder

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

  • Lemon wedges (for serving)

Equipment Needed:

  • Large baking sheet

  • Mixing bowl

  • Measuring spoons

Step-by-Step Instructions:

  1. Preheat Oven: Preheat your oven to 220°C (425°F). Line a large baking sheet with parchment paper for easy cleanup.

  2. Season Cauliflower: In a large mixing bowl, combine cauliflower florets with olive oil, turmeric, garlic powder, salt, and pepper. Toss until the florets are evenly coated with the seasoning.

  3. Roast: Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Ensure the florets are not overcrowded to allow for even roasting.

  4. Cook: Place the baking sheet in the oven and roast for 25-30 minutes, or until the cauliflower is tender and has golden, crispy edges. Halfway through the cooking time, flip the florets to ensure even roasting.

  5. Serve: Transfer the roasted cauliflower to a serving dish. Garnish with chopped fresh parsley and serve with lemon wedges on the side.

Suggested Side Dishes:

  • Grilled chicken or fish

  • A quinoa or couscous salad

  • Steamed green beans or a mixed greens salad

Common Mistakes/Points of Care:

  • Overcrowding the Pan: Spread the cauliflower in a single layer with some space between the florets for even roasting and crisping.

  • Oven Temperature: High heat is crucial for achieving a nice caramelization and crispiness on the cauliflower.

  • Seasoning: Adjust the amount of turmeric and garlic powder according to taste, but be mindful not to overpower the natural flavor of the cauliflower.
