Ingredients List:

  • 500g (1.1 lbs) mixed mushrooms (e.g., button, cremini, shiitake), cleaned and sliced

  • 2 tablespoons olive oil

  • 3 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

  • 1 teaspoon fresh rosemary, finely chopped (or 1/2 teaspoon dried rosemary)

  • Salt and freshly ground black pepper, to taste

  • Fresh parsley, chopped (for garnish)


Equipment Needed:

  • Large skillet or frying pan

  • Wooden spoon or spatula


Step-by-Step Instructions:

  1. Heat Pan: Heat the olive oil and butter in a large skillet over medium-high heat until the butter is melted and foamy.

  2. Cook Mushrooms: Add the mushrooms to the pan in a single layer, as much as possible. Let them cook without stirring for 2-3 minutes to allow them to brown on one side. Stir and continue to cook for another 5-7 minutes until they are golden brown and tender.

  3. Add Garlic and Herbs: Reduce the heat to medium. Add the minced garlic, thyme, and rosemary to the mushrooms. Cook, stirring frequently, for 1-2 minutes, until the garlic is fragrant but not browned.

  4. Season: Season the mushrooms with salt and pepper to taste. Stir well to combine all the flavours.

  5. Serve: Remove from heat. Transfer the mushrooms to a serving dish and garnish with chopped fresh parsley.
